3 good ones - Pizza Express & Browns & Carluccios
OK so I am not a British teacher or director, but here are three that I have tried and enjoyed while making arrangements for the conference: (links to their sites for photos, menus & prices.)
Three that I've tried and can recommend -
Pizza Express is it if you need pizza, salad, or a sandwich while in Brighton. I recommend it and it is just a 2 minute walk out the back door of the Thistle (dine in or carry out).  Out the rear entrance toward town (not toward the beach), 30 seconds up to the first street (Prince Albert), turn left and it is in sight up ahead on the right at #22. The food is tasty - the thin crust pizza's a favorite - and the atmosphere and mix of people within serving you are all just fine.  Fine too for carrying on conversation - not loud. Might see you there!

Browns restaurant & bar is another Brighton favorite - three minutes walk up further up the way past Pizza Express at 4 Duke St. It's fancier than Pizza Express and while it isn't budget it won't break the bank. Nice atmosphere and open breakfast at 9am, lunch & dinner until 11pm-midnight.

Carluccio's Caffe open 8.00am-11:00pm within a block or two of the Prince Regent centre pool complex is a great place for lunch or dinner cafe that is bright and airy (glass along one side of the restaurant) on Jubilee St. a 10-15 min. walk through the Lanes northward.  Always busy and a bit noisy but in a hub of activity in Brighton. - Steve Graves

Regency and Melrose restaurants on Kings Rd. that runs on the seafront side of the Thistle hotel, and Bankers  - by bojangles

Clubs & Eats

Stick to the Lanes & North Laine (note spelling) for some cool bar’s n’stuff shops boutiques.

Bars; get out early for 2-4-1 offers all over the place.

  Browns Bar (mentioned above) easy walk from Thistle

  Entourage  middle st.

  Bar Om oriental decor

  Ha!Ha! Bar & Canteen

For more mature ages maybe avoid pretty much anywhere in West Street, where the 18-25 chavs congregate in large raucous numbers until about 3am..lots of bars, pubs n' clubs down the seafront

For a cheesy disco flava club dance around your handbag, try “Goodtimes” at Below Belushi, literally around the back of the Royal York, like 50yrds. 10pm-3am. Then get your selfs down to the Funky Buddha Lounge, 11-6am. In reality there are so much choice for clubs, pubs and bars, its getting difficult to recommend, and of course very subjective.

I think you’d also enjoy a night spent out at the Marina, al-fresco eating drinking and posing, lots of places to east on the Waterfront, take a looksee http://www.brightonmarinashopping.co.uk/leisure/food-drink/

Take cocktails in the Bar at the Seattle Hotel, then eat at places like Strada, Frankie & Bennys, Pizza Express, Prezzo, Café Rouge, Indian, Chinese, Fish Brasserie, and Karma, http://www.karmabrighton.co.uk/ which turns into a club at about 10pm, make sure you get on the VIP Guest List. Lloyds Bar 1 on the West Quay brightonmarinashopping.co.uk/leisure/… is a half decent pub there, all overlooking the waterfront, also a good Casino down there too (Rendezvous) http://www.rendezvouscasino.com/brighton/
